Curanto, an Unmatched
Gastronomic Experience in Patagonia
Curanto is a custom coming from the natives of southern Chile that has best survived in the region and whose translation can be traced back to the term “curantu” (cura means “stone”, and antú means “sun”, which would lead to a literal translation “stones in the sun”).
This ceremony consists of cooking with heated stones placed in a pit under the ground. Leaves are placed on top of the stones when ready and a variety of seafood, meat, vegetables and sometimes cheese are placed on top of the leaves covered in more leaves and finally buried to create a sealed underground oven. The food cooks and the flavors eventually meld together, at which point the pit is opened and the curanto is served.
The practice of the Curantobegan in the Chilean island of Chiloe, but there is no formal recipe for the meal, and it commonly consists of whatever food is readily available. Shellfish are very plentiful on the south of Chile, which results in the meal consisting mainly of clams and fish, although there are also variants with other types of meat, especially in the Argentinean side where this dish is present
During this gastronomic experience you will not will be able to learn not only about the original peoples of Patagonia, participate in this tradition that has been maintained throughout the centuries, but you will also be able to enjoy the natural scenery surrounding, typical of the Argentinean Patagonia.
